Ask for the smallest lamb your butcher has (like those from New Zealand), or buy a 3½–4-lb. piece of a leg.


  • 4 cloves garlic cloves, crushed
  • 2 tablespoon fresh thyme leaves
  • 2 tablespoon kosher salt plus more for seasoning
  • 4 fresh bay leaves, divided
  • 3 lb Yukon Gold potatoes (6–8), peeled, cut into ¼” slices, divided
  • 7 tablespoon olive oil, divided
  • Freshly ground black pepper
  • 1 3½–4-lb. bone-in leg of lamb
  • 2 lb tomatoes, cut into ¼” slices
  • 2 medium onions, cut into ½” slices

Recipe Preparation

  • Preheat oven to 350°. Combine garlic, thyme, and 2 Tbsp. salt in a small bowl. Using your fingertips, rub mixture until it resembles wet sand (larger pieces of garlic will remain); set aside. Crush bay leaves.

  • Combine half of potatoes with 1 Tbsp. oil and 1 crushed bay leaf in a large roasting pan; season with salt and pepper and toss to coat. Spread out potatoes in a single layer.

  • Place lamb on top of potatoes and rub with garlic mixture. Layer tomatoes, onions, remaining 3 crushed bay leaves, and remaining potatoes around and up sides of lamb, seasoning with salt and pepper and drizzling with remaining 6 Tbsp. oil as you go (lamb will be nearly covered). Add wine to pan; cover tightly with foil.

  • Roast until lamb is very tender, 3–4 hours. Remove foil and increase oven temperature to 425°. Roast, turning lamb halfway through, until lamb is golden, 20–25 minutes longer. Let rest in roasting pan for 15–20 minutes.

  • DO AHEAD: Lamb can be roasted 2 days ahead. Cover and chill. Reheat before continuing.

  • Pull meat from bones in large chunks; discard bones and fat. Place meat and vegetables on a platter. Skim fat from surface of cooking juices in pan. Spoon some cooking juices over lamb and vegetables and serve remainder alongside.

For a small dinner party by a self-identified "not great cook", I'd go for a simple meal with great ingredients, rather than anything that requires complicated prep, a lot of cooking steps, or great precision.

Some ideas:
- Salmon fillets cut into individual portions or salmon steaks. Make a sauce, something like a soy-ginger glaze, to keep it moist even if you overcook it slightly (really easy to do with salmon). Roast at a low temperature, it's more forgiving than a high-heat roast.
- A whole beef tenderloin or rib roast never fails to impress, and is really easy - just season with salt & pepper and roast until an internal thermometer reaches 125. Make a side dish of roasted potatoes: buy fingerling potatoes or cut yellow potatoes into 1" chunks, toss with a splash of oil / salt / pepper / garlic / dried thyme, roast alongside the beef. Serve with steamed asparagus or roasted broccoli, and a salad.
- Or fire up the grill and do burgers. Summer's almost over, take advantage of it while you still can!

SUPERB beef stew! I took the great base recipe, and tweaked it with a compilation of reviewer recommendations. The end result is a winner, to be sure. Here is what I did (and I won't change a thing the next time I make it): 1. Increase flour to 1/3 cup and substitute seasoned salt for regular salt. Put flour mixture into gallon-sized, zippered bag. Shake beef in bag to coat. Sauté coated beef in 1-2 tablespoons olive oil until browned. Add chopped onion to beef to sauté and soften. Transfer to slow cooker. 2. Mix beef broth (I used Swanson's Certified Organic in aseptic carton) with 1 TABLEspoon Worcestershire and ½ cup red wine. Pour into hot skillet to deglaze, then pour over beef and onions in cooker. 3. Add remaining ingredients with these additions: increase garlic to 2 cloves minced, 2 bay leaves add 1 packet McCormick's Beef Stew Seasoning. Your home will smell wonderful all day, and your meal will be a savory feast! I served the stew in bowls, accompanied by slices of fresh, crusty bread.

I am so glad that so many others are commenting that the NY chicken shawarma recipe isn't very good or just mediocre. I thought we must be crazy or something. Tried it and it was meh.

If you want to make things super easy for yourself, you can make a pot roast in a slow cooker. I'm not sure how fancy you want to get.

If that's too casual, you can make the Cook's Illustrated traditional sunday roast with yorkshire pudding. I can't seem to find the recipe now, but I remember it being super easy.

Or you can just buy a beef wellington from one of the fancy groceries in mclean or DC (like Stachowski's):

Back in the day, I used to think schwarma was amazing. I was in the middle east over the summer and I ate a ton of schwarma - most were just so so. Looking back, I think I ate it a ton when I was in my 20s and partying. It was drunk food, so I guess my drunk self enjoyed it.

It's delicious. Tastes like a meal you'd get in a cool italian "enoteca" type place.

For a simple, easy, but very tasty pasta that seems fancier than it is because it uses burrata, this (I guess more of a side for large company, but it's filling with the richness of burrata)

I think you might have to increase the ratio of marinade. We don't use as much chicken as the recipe calls for because we can't eat it, so maybe that's why the flavor is more powerful? I also slice the red onions much thinner (like 1/16s), and I put a other veggies on the sheet pan with it: cherry tomatoes, colored bell peppers. these both also enhance the flavor, IMHO.

OP, I find basically any marinated meat on a sheet pan with veggies can be a big hit. We also do mustard-lemon juice-olive oil with broccoli, white onions, and green beans. And Tajin lime salt, lime juice, avacado oil marinade with zucchini, bell peppers, mushrooms, broccoli, and white onions. These are obviously pretty casual meals. If you want to go fancier, I don't have particularly simple recipes. I would recommend salmon, though, because it seems fancy with little work.``

Salmon is terrific for dinner parties, but it can take some practice if you're not used to cooking it. It has a very narrow window of done-ness: take it out 2 minutes early and the thickest part will be raw take it out 2 minutes too late and it'll be dry. If you do decide to go with salmon, I'd recommend a recipe that cooks at low heat in a sauce, as it'll be more forgiving.

Big cuts of roast also look impressive and feel fancy without a lot of hands-on work. Bacon-wrapped pork tenderloin is always a hit. Beef tenderloin, or rib roast if your guests are real meat-eaters.

I've also done halved Cornish Game Hens, and they are fun - as easy as roasting chicken, but so cute and manageable sizes for each person with side dishes.

This is our favorite dinner party recipe. It’s actually very simple but looks impressive and is so good. It’s also fun bc it’s lettuce wraps with different sauces so it’s less formal than a plated meal and is really fun.

So it's time to start getting together some meals. A few things to remember first though:

1. Thank you all so much, you are doing a very good thing!

2. Don't be afraid of the allergy restrictions, I have food allergies too and it's pretty easy to deal with, it just takes an extra minute.

3. Sim asked me to share this " Remember to please avoid milk, eggs, nuts, sesame seeds and kiwi fruit. Always check all labels. If products are made in Australia but they say they have "traces of" one of the allergens it is safe to use these products.

4. Have fun, enjoy making these dishes as much as the family will enjoy eating them!

A 20-Dish Spanish Brunch Menu, Ranked

A 20-year anniversary is cause for celebration in itself, but when it’s the 20th birthday of a restaurant in Hong Kong, well, its longevity is a thing of almost saint-like reverence. Long-standing Spanish stalwart Olé is taking a stroll down memory lane with its newly launched brunch menu, filled with a staggering number – 20! – of its customers’ all-time favourite dishes, priced at the unbelievably reasonable price of $380 per person. Say what?!

Now, 20 dishes is no mean feat, and authentic Spanish flavours, fresh ingredients and traditional recipes are a given when delving into what makes up the core values of Olé’s food. We decided that we needed a taste of each and every one to find out how they have withstood the test of time in a culinary landscape as volatile as Hong Kong’s. It took us several hours to plough through this banquet-like meal – boy, was it worth it. Let‘s get started.

20. Sautéed chorizo with garlic and chives

Sorry, chorizo, we desperately wanted to love you, but you were just a tad too oily for us.

19. Baby squid in ink sauce

A packed dish of baby squid as black as my soul. Aesthetically, nothing speaks to me more. But, alas, these shrimp and almond-stuffed baby squid, served in their own ink sauce, just didn’t do it for us. The briny flavour was slightly too overwhelming, like being slapped in the face with the full force of the ocean, and the texture reminded us of rubber.

18. House-marinated Spanish olives

We actually loved these as a perky starter, but at the end of the day, in the face of a brunch that boasts a total of 20 dishes, they’re just olives, aren’t they (albeit freshly imported olives from Spain prepared Andalusian style with paprika, cumin seeds, lemon and garlic)?

17. Alioli potatoes

Nope, that’s not a typo. We may spell it “aioli” in English, but the traditional Spanish sauce takes its name from its ingredients: garlic (all) and oil (oli). High marks for full potato coverage, extremely creamy aioli and firm-to-the-bite, non-greasy potato chunks. We enjoyed this one.

16. Ibérico ham and tomato bread

There is nothing not to love about Spanish Ibérico ham – no exceptions here at Olé. Paper-thin slices of knee-weakening ham made for quickly devoured snacks at our table. The accompanying tomato-coated bread, however, didn’t leave much of an impression.

15. Padrón peppers

Don’t fear, these peppers aren’t even remotely spicy. What they are is perfectly blistered on the outside, soft on the inside, well seasoned and an addictive, straightforward starter to whet our appetites we were hooked in an instant.

14. Sizzling garlic prawns (gambas al ajillo)

Plump and juicy, these fresh prawns are prepared in traditional Spanish terracotta pots and served sizzling at the table. This reliable and simple recipe consists of olive oil, garlic, onion and our favourite crustacean. It was an aromatic dish full of flavour and generous in portion, albeit a bit too oily. Then again, it was dunked in a bath of olive oil, so we can’t say we didn't expect it.

13. Gazpacho

Cold soup may not be for everyone, but the chilled taste of gazpacho ranks high on our list, especially in the summertime. We love the intense garlicky notes that make a strong stand amongst the sweet, refreshing flavours of cucumber, red bell pepper and onion. Olé’s gazpacho follows a traditional farmer’s recipe that blends hard-crust bread into the soup and uses mineral water, olive oil and tomato to creative a rich, creamy texture.

12. Pear confit in red wine

Wonderfully simple plating meets complicated, rich flavours. Served with a dab of cream, these poached pears were just sugary enough to balance out the richness of the red wine.

11. Aubergine stuffed with mushrooms

While Olé's not quite the right destination for a vegetarian palate, they do plan for emergencies. A southern Spanish creation by Executive Chef Jesus Pascual, this dish of halved and hollowed-out aubergine is stuffed with more aubergine, red bell pepper and mushrooms. Mousseline sauce is added – think of it as a luxurious, richer hollandaise sauce – then baked until tender. Topped with melted cheese and tomato sauce, this colourful dish held its weight against Olé’s seafood-centric menu.

We‘re at the halfway mark now, and this is where the rating gets tough.

10. Grilled Spanish octopus with paprika and aioli

We’re always looking forward to these unique, bite-sized parcels when we pay a visit to Olé. A rollercoaster of textures – from the softness of the potato base, to the chewy firmness of the octopus, to the creamy aioli on top – makes this dish a triumphant success.

9. Stuffed piquillo peppers

This dish is not a looker, but it made up for its appearance with its excellent execution. These piquillo peppers from Spain are stuffed with a filling of cod marinated in flour, butter and white wine, then baked in a blanket of cheese and homemade red bell pepper sauce. Served piping hot, the cod flaked apart at the touch of a fork and the flavour was subtly sweet.

8. Baby lamb chops, parilla style

There’s nothing fancy about the preparation of these New Zealand baby lamb chops – no unique herbs, no elaborate prepping methods – but that’s because the raw meat is already so impressively aromatic that all they need is a thorough sitting on a traditional Spanish parrilla (grill). Olé served them up tender and juicy, full of smoky and gamy flavours, with a side salad and thick-cut fries.

7. Cod in green sauce

When are fresh clams not delicious? Olé takes inspiration from the Basque country with this fragrant oceanic dish of breaded Alaskan black cod fillet served on a bed of clams. Bathed in a green sauce made of white wine and a peppery, garlicky fish stock, the cod is slow-cooked on low heat to create an especially tender texture.

6. Traditional Spanish squid-ink rice

Presentation aside, this squid-ink rice was absolutely stunning. The trio of garlic, onion and olive oil first creates an aromatic base, thoroughly flavouring the squid, prawns and rice, before the house-made fish stock and ink sauce are added to craft a creamy, rich risotto-like rice dish full of umami notes and brininess.

5. Orange flambéed Catalan cream

If you like crème brûlée, you’ll like this – it’s basically a Spanish version of the classic French dessert, flavoured with orange rind, vanilla and cinnamon. We cracked through the sugary crust with relish and heaved satisfied sighs at the taste of the warm, slightly citric custard. A true delight.

4. Leche frita (fried milk) with toffee reduction

If you haven’t tried fried milk before, it’s a must! Leche frita is made by mixing flour with milk and sugar until it thickens into a dough, then the dough is fried, dusted with cinnamon and served with a toffee reduction. It may sounds bizarre, but it tastes absolutely delicious. What you get at Olé is a thick, wobbly slice with a soft, tofu-like consistency. Spoon up some of that toffee glaze and every forkful will bring you one step closer to mouthgasm.

3. Spanish churros with hot chocolate sauce

We were a little taken aback with these skinny churros, in a good way. Quite slim in appearance, unlike the puffy and rotund variation we’re used to seeing, our first bite provided a heavenly crunch. A liberal dusting of sugar made these light sweets perfect on their own, even without dunking in the hot chocolate sauce. These were definitely some of the best churros we’ve had in recent memory.

2. Roasted suckling pig, Segovia style

When you grow up surrounded by the aromatic Chinese-style suckling pig, it’s always fascinating to encounter other countries’ takes on this dish. And how those in Segovia – a historic city in central Spain – prepare it allows the pig and its natural flavour shine. The chefs at Olé applied a minimal amount of salt, then slow-roasted the pig for three hours until the flesh dripped with juices and the skin formed a crisp crust. Long story short: it was a textural and rich delight.

1. Traditional Spanish seafood paella

Paella has rarely tasted more seafood-y. Olé has really gone all out, loading their traditional seafood paella with all sorts of under-the-sea bounty, from prawns, to mussels, to octopus and squid. Seasoned with a homemade bisque, the rice was moist and sung with a subtle infusion of saffron and garlic. We were absolutely smitten with the savouriness of this paella and were left scraping at the soccarat (crunchy rice) at the bottom of the blackened pan for the very last scraps.


And, there you have it, folks. My rating skills have been exhausted and my stomach has ballooned. This incredible nine-course, 20-dish brunch menu at Olé is available on Saturdays and public holidays from 12–3pm and is priced at a mind-boggling $380 per person, with free-flow drink options available for wine, sangria, cocktails and mocktails.

Cavatelli with Pork Ragu

This is a wonderful braise where is it all about cooking it as slow as possible… and as rich as possible.

The Cavatelli is a wonder, shell pasta pairing.

The really fun part however is the addition of the currants and kale. They really make the ragu pop.

I cooked this dish for Nat and I when she was in hospital waiting for Maxy B to come out. Our home-cooked dinners in the hospital made days of walking the corridors and staring at the roof so much better.

And this dish was one of the best we had during that long week.

Cook, eat, enjoy… and freeze for a dinner next week.


750gm boneless pork shoulder cut into 3cm pieces
Salt and freshly ground black pepper
1/4 cup olive oil, plus more
1/2 medium onion, finely chopped
1 carrot, peeled, finely chopped
1 celery stalk, finely chopped
1 garlic clove, finely chopped
1 sprig rosemary
1 sprig oregano
1 bay leaf
1 x 400ml can crushed tomatoes
1/2 cup dry red wine
1/4 tsp black peppercorns
1/4 tsp ground nutmeg
1/8 tsp ground cloves
500gm cavatelli or other small shell pasta
1/3 cup dried currants soaked in hot water
1 bunch kale, ribs and stems removed, torn into 6cm pieces
1/4 cup (1/2 stick) unsalted butter
1/2 cup grated Parmesan, plus more

  1. Season the pork with salt and pepper. Heat 1/4 cup oil in a large heavy pot over a medium-high heat. Working in batches, cook the meat until browned all-over. Set aside.
  2. Drain all but 2 tbsp of fat from the pot reduce the heat to medium and cook the onion, carrot, celery and garlic, stirring occasionally until golden brown: around 10 minutes.
  3. Tie rosemary, oregano and bay leaf into a bundle with kitchen twine and add to the pot along with the pork, tomatoes, wine, peppercorns, nutmeg and cloves.
  4. Add water just to cover meat and bring to a boil. Cover, reduce heat and simmer, adding more water as needed, until the meat is very tender: around 1 1/2 hours.
  5. Discard the herb bundle. Using 2 forms, shred the meat in the pot and cook, uncovered over a medium heat until the sauce has thickened and you have a ragu.
  6. Cook the past in a large pot of boiling water until al dente.
  7. Add the currants and kale to the ragu and cook until the kale is soft and cooked: around 5 minutes. Mix in the butter and 1/2 cup of the Parmesan and season again.
  8. Serve the ragu on the pasta, topped with more Parmesan.
